Grey Brooks was 13, a middle school student in Palos Verdes where the sun and surf are constant. That year, he pushed his way into a home economics class (they discouraged him from taking this “girl’s class”) and learned to make “Cheesecake Dream,” a recipe he carried with him into adulthood. This cheesecake took center stage on Thanksgiving and Christmas, a favorite of family and friends.
In New York City in 2021…
I was homesick for my dad and his cheesecake so he emailed me the recipe and wrote, Call me if you want me to walk you through it. I’ve been calling him about it ever since and in an homage to my loving dad, founded Brooks Cheesecakes in East London in 2024.
